1 cup granola or wheat germ
1 cup quick-cooking rolled oats or instant oatmeal
2 T ground flaxseed
½ cup raisins, mixed dried fruit bits or other goodies like mini chocolate chips
½ cup all-purpose flour (sifted)
1 beaten egg
1/3 cup honey
1/3 cup cooking oil ( I use Canola oil)
¼ cup packed brown sugar
½ t ground cinnamon (optional)
Preheat oven to 325°
Line a baking pan with foil and set aside.
In a mixing bowl combine granola, oats, flaxseed, flour and fruit. Sometimes I clean out my kitchen and throw in M&M's, peanut butter chips (my son can have peanut butter), butterscotch chips, shaved coconut or instant oatmeal with apples or peaches. The great thing about this recipe is you put in only what your family likes, or what you feel comfortable adding.
Stir in eggs, honey, oil, brown sugar and cinnamon if desired. Feel free to experiment--add more honey or egg if it's dry, add more oats if goodie heavy.
Press evenly into pan. Some recipes call for greasing the pan, I've found I don't need to. It's up to you.
Bake in a 325° oven for about 30-35 minutes or until lightly browned around the edges.
Cool. Use the foil to remove from the pan.
Cut into bars and wrap individually in plastic wrap if they last that long in your house. Will make roughly 2 dozen. Making homemade is a quick, easy and inexpensive way to have a healthy snack for your family that will taste great and help you stay in control of special diet needs.
