I have just the thing. I'm calling it Poor Man's Caprese Salad. Here's what I do.
2 handfuls of just-picked cherry tomatoes, sliced
English cucumbers or those straight from your garden, diced
10 leaves off a basil plant
2 mozzarella cheese sticks, cut
3/4 cup Italian dressing
In a mixing bowl add tomatoes, cukes and cheese. Rip basil leaves into small pieces. Add dressing and mix. Spoon into a container with a lid and refrigerate. Tip to mix every few hours and serve cold.
The just-picked basil does it. If able to get fresh mozzarella or garden-picked tomatoes, use them for a dish that tastes like a high end restaurant without the price tag.
