Pennsylvania Dutch String Bean Soup
3 c fresh string or Roma beans milk
5 medium potatoes 3 T flour
1 large onion salt and pepper
2-4 slices bacon
Clean and cut beans into bite sized pieces. Put in a large pot and cover with water.
Cook until al dente.
Add potatoes, onion and bacon. Add water if it boils down.
Cook until tender. Add milk when it reduces.
Thicken with flour and water. Salt and pepper to taste.
Serve with fresh crusty bread and butter and a dry white wine
